Few things say “summer” quite like firing up the grill, and while it makes perfect sense for that delicious piece of meat or that side dish, not very many people use it for the final course – dessert. Grilled desserts, though, are amazing, and it’s a great way to keep the kitchen cool in the heat of summer. Here are a few ideas you may want to consider.
Grilled Pound Cake with Espresso Chocolate Sauce – From Better Homes and Gardens, this recipe makes the most of the word dessert. You need two tablespoons of boiling water, a tablespoon of instant espresso, ¾ cup of whipping cream, one tablespoon of light corn syrup, eight ounces of semisweet chocolate, a sixteen ounce prepared pound cake, ¼ cup of orange juice, a cup of whipping cream, ½ cup of pistachio nuts and ice cream (optional). Start by combining the water and espresso powder in a bowl. Set it aside. In a pan, combine ¾ cup of whipping cream and corn syrup. Boil, and remove it from the heat. Add the espresso mixture and all of the chocolate. Cover it and let it stand for four minutes. Whisk it until it’s smooth, and cover it. Cut the pound cake into ¾ inch slices. Hit each slice with a fork several times to create a some holes in the slices. Let orange juice drizzle over each slice. Place the cake slices on a pre-warmed grill. Grill each until thoroughly toasted. Serve each slice with ice cream, espresso chocolate sauce, whipped cream, and pistachios.
Pot of S’Mores – This delicious taste of summer comes from Taste of Home, and it’s the perfect way to eat this classic summer treat. You’ll need a package of graham crackers. Be sure to crush them. You’ll also need ½ cup of melted butter, a can of sweetened condensed milk, two cups of semisweet chocolate chips, a cup of butterscotch chips, and two cups of mini marshmallows. Preheat your grill, then line a pan with foil. Combine the cracker crumbs and the butter, then press to the bottom of the pan. Pour in the milk, then add the chocolate and butterscotch chips. Add the marshmallows on top, cover the pan, and place it on the grill. Cook for fifteen minutes, or until the chips melt.
Grilled Brown Sugar Peaches with White Chocolate – This recipe is from bon appetite, and you can expect nothing short of decadence here. You’ll need four tablespoons of unsalted butter, two tablespoons of dark brown sugar, ½ teaspoon of cinnamon, four halved peaches, 1/3 cup of chopped white chocolate, and three tablespoons of pistachios. Preheat your grill. Whisk the first three ingredients together. Add the peaches, and make sure they’re well coated. Put the peaches with the cut side down on the grill. Turn them over after a minute. Add the white chocolate to the cavities, then drizzle the butter mixture. Grill until the chocolate melts (or about two minutes). Sprinkle with pistachios.
