One of my favorite sweets is mint chocolate chip. I decided it would be fun to combine that flavor with a cupcake. Top it off with an Andes mint and serve with a scoop of ice cream to create one of the best gourmet chocolate desserts ever. Yum!
The cake part of this recipe is a basic chocolate cake. You can use any chocolate cake mix and follow the box instructions for the batter. After spooning the batter into the cupcake pan, scoop about 1/2 T of mini chocolate chips onto the top of each cupcake. Then bake according to instructions.
Mint Frosting Recipe
Combine the butter, vanilla and salt. Add sugar alternately with milk, beating until light and fluffy. Mix in 3 drops of mint extract and 2-3 drops of green food coloring (or until you get a fun mint green color).
Spread frosting on cooled cupcakes and top off with an Andes mint or more mini chocolate chips.
