Mississippi Mud Cupcakes

Most of you have heard of Mississippi Mud Cake. It's a chocolate cake topped with marshmallows and drizzled with chocolate. Well these are the same thing... just in individual form. Mississippi mud cupcakes are easy to make but seem like they took all day. Wow your friends and family with this marshmallow and gourmet chocolate covered classic recipe in bite size form.

The cake part of this recipe is a basic chocolate cake. You can use any chocolate cake mix and follow the box instructions for cupcakes. The best part of this cupcake is the marshmallow cream icing.

Marshmallow Cream Icing Recipe

  • 3 Egg Whites
  • 2 C Light Corn Syrup
  • 1/2 tsp. Salt
  • 2 C Powdered Sugar
  • 1 T Vanilla

In a large bowl or stand mixer, combine the egg whites, corn syrup, and salt. Beat for 10 minutes. On low speed, beat in the sugar 1/2 cup at a time. Then blend in the vanilla. Pipe onto cooled cupcakes.

This recipe can be frozen until ready to use or stored in the refrigerator up to one week.

Chocolate Drizzle Recipe

Ingredients:

  • 2 tablespoons butter
  • 2 ounces unsweetened chocolate
  • 1 cup sifted confectioners' sugar
  • 2 tablespoons boiling water

Instructions:

Melt together the butter and chocolate over low heat. Stir in the sifted confectioners' sugar and boiling water. Beat until smooth. Drizzle lightly over the marshmallow icing. The chocolate should drizzle without being watery. Adjust the amount of powdered sugar if necessary.

The Final Product

Well I don't know about you, but my mouth is watering just looking at the photo. Notice that you can add some crushed pecans and even some miniature marshmallows on top of the drizzled chocolate icing to make the presentation even more beautiful.

This cupcake is heavenly for a chocolate lover such as myself. My downfall is sweets so a Mississippi Mud Cupcake, a George Mud Fudge blizzard, Chocolate Covered Oreo Cookie Cheesecake, or a piece of Mud Pie never gets passed by.

One of my favorite things to do with cupcakes is to take them to church potlucks or give them as birthday gifts to friends and family. I just pack them up in a box and throw in a few birthday hats along with some candles for an instant birthday party.

If I'm feeling really crazy, I bake up a couple different flavors and include some of each. That is one of the great things about cupcakes... you can mix and match the flavors to make the perfect birthday, Christmas, or even get well gift for your loved one.
