Almond Citrus Muffins

  1/2 cup whole natural almonds (gourmet nuts) 1 1/4 cups all purpose flour 2 tsp. baking powder 1/4 tsp. salt 1 cup shreds of wheat bran cereal 1/4 cup packed brown sugar 3/4 cup milk 1/4 cup orange juice 1 tsp. grated orange peel 1 egg 1/4 cup vegetable or almond oil Spread almonds in a single layer on a baking sheet. Bake at 350 degrees for 12 to 15 minutes, stirring occasionally, until lightly toasted. Cool and chop. In crease the oven to 400 degrees. In a large bowl, combine the flour, baking powder and salt. Almond Cookies

Ingredients: 1 cup rice flour 1/2 cup light brown sugar, packed 2 cups finely ground blanched almonds 6 tbs soft butter 1 tbs ice water 30 almonds Sift the rice flour and brown sugar into a bowl. Mix in the almonds, and then work in butter with the hand. Stir in the ice water. Break off tablespoon-size pieces of dough and shape into balls. Arrange on a greased cookie sheet, leaving at least 1 inch between each. Flatten slightly and place an almond in the center of each. Bake 12 minutes, or until cookies are delicately browned. Almond Cookies (Recipe)

•1 cup rice flour
• ½ cup light brown sugar, packed
• 2 cups finely ground blanched almonds
• 6 tbs. soft butter
• 1 tbs. ice water
• 30 almonds

Sift the rice flour and brown sugar into a bowl. Mix in the almonds, and then work in butter with the hand. Stir in the ice water. Break off tablespoon-size pieces of dough and shape into balls. Arrange on a greased cookie sheet, leaving at least 1 inch between each. Flatten slightly and place an almond in the center of each. Bake 12 minutes, or until delicately browned.
