Fried Duck - Chang Chung Op
Usually when the term duck comes up, you might think of a rubber ducky, as many do. There are even many duck themed baby showers put together every year. However, if you're on the other end of the cutesy spectrum, you've probably wondered how to cook wild game (er, duck). This recipe for fried duck will certainly render you speechless.
Ingredients:
- 1 duck (4 lbs.), disjointed
- 2 tbs. flour

- 2 tbs. cornstarch
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 tbs. oil
- 2 cups thinly sliced scallions
- 1 tbs. minced ginger root
- 2 minced garlic cloves
- 4 tbs. soy sauce
- 4 tbs. sherry
- 1/2 tsp. Ac’cent
- 1/2 cup chicken broth or water
Remove as much fat as possible from the duck. Roll in a mixture of the flour, cornstarch, salt, and pepper.Heat the oil in a deep skillet; brown the duck in it. Pour off the fat. Add the scallions, ginger, and garlic; cook 2 minutes, stirring frequently. Add the soy sauce, sherry, Ac’cent, and broth or water. Cover and cook over low heat 1 hour or until duck is tender and all the liquid is absorbed.![]()

Manderine Soup - Peiping T’ang
Much like everyone loves cookies, everyone loves soup! So it's no wonder why manderine soup is such a loved recipe!
Ingredients:
- 1/2 lb. pork
- 1 tbs. oil

- 1 cup sliced mushrooms
- 1/2 cup diced carrots
- 1 cup chopped parsley
- 6 cups chicken broth
- 1/2 cup chopped spinach
- 1 tsp. Ac’cent
- 1 egg, beaten
- 2 tbs. cornstarch
- 1/4 cup water
Trim the pork of all fat and slice pork into matchlike strips. Heat the oil in a saucepan; sauté the pork for 5 minutes. Add the mushrooms, carrots, and celery; sauté 5 minutes. Stir in the broth, spinach, and Ac’cent; bring to a boil. Add the egg, stirring briskly. Mix the cornstarch with the water and add to the soup, stirring constantly until lightly thickened. Taste for seasoning.

National Chicken and Pork Dish - Adobong Manok At Baboy
Have the chicken chopped into 2-inch pieces, bone and all.
Cut the pork in 1 1/2-inch pieces. Mix together the salt, pepper, garlic, vinegar, and bay leaf; marinate the pork in the mixture for 30 minutes. Drain, reserving the marinade.
Heat the oil in a casserole or heavy saucepan; brown the chicken and pork in it. Add the marinade and water. Cover and cook over medium heat 30 minutes, or until tender and almost all the liquid has evaporated. Stir in the coloring and coconut milk. Cook for 5 minutes. Taste for seasoning.

Stuffed Noodles In Stew – Pancit Molo
It's not your usual Italian basket that you'd expect with noodles, but this recipe is equally delicious!
Ingredients:
Sift the flour and salt into a bowl; work in the egg yolks and water with the fingers. Knead until smooth and elastic. Cover with a bowl and let stand while preparing the filling:
- 1 lb. ground pork
- 1/2 lb. ground shrimp, shelled, deveined, and chopped
- 1 tsp. anchovy paste
- 1 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1/2 cup chopped scallions
- 4 minced garlic cloves
- 1/2 cup chopped water chestnuts
- 3 tbs. oil
- 1 cup chopped onions
- 6 cups chicken broth
Mix together pork, shrimp, anchovy paste, salt, pepper, scallions, garlic, and water chestnuts. Roll out the dough, paper-thin, and cut into 3 inch squares. Place a heaping teaspoon of the mixture on each and fold over the dough into a triangle. Seal edges well. (You will have about two-thirds of the pork mixture left.)
Heat the oil in a saucepan; sauté the onions for 5 minutes. Add the remaining pork mixture and sauté for 5 minutes. Stir in the broth and bring to a boil. Carefully drop the stuffed noodles into it. Cover and cook over low heat for 15 minutes. Taste for seasoning and serve in deep bowls.

Watercress Soup - Suy Yeung Choy Tong
Ingredients:
- 1/2 lb. raw pork

- 2 tbs soy sauce
- 2 tsp cornstarch
- 1/2 tsp sugar
- 1/4 tsp pepper
- 2 tbs oil
- 3 bunches watercress
- 2 tsp sliced ginger root
- 6 cups chicken broth or water
- 1/2 tsp Ac’cent
- 2 tsp salt
- 2 eggs
Trim the pork of all fat and dice the pork. Toss with the soy sauce, cornstarch, sugar, pepper, and 1 tbs oil. Discard the stems of the watercress; wash and drain.
Heat the remaining oil in a saucepan; fry the ginger in it for 1 minute. Stir in the broth or water and bring to a boil. Add the watercress, Ac’cent, salt, and pork mixture. Cover and cook over low heat 20 minutes. Beat the eggs well and mix into the soup until set.
