How To Make Cookies With Pancake Mix

Image by dno1967b on FlickrIf you love pancakes and you love cookies, get ready to have your mind blown: you can make cookies from pancake mix.  Think of it!  With a few simple ingredients, you have the base for two of your favorite treats right in your kitchen cupboards.

Cooks.com has a great recipe for “Master Mix.”  This is just a simple base from which you can make pancakes, waffles, cornbread, drop cookies, muffins, coffee cake, oatmeal cookies, gingerbread, fritters, pudding cookies, shortcake, cake, and dumplings. The only thing it can’t do is the dishes.

"Master Mix" Recipe

Ingredients:

*Yields 29 cups of mix, which can be stored in airtight containers and stored at room temperature.

  • 5 pounds all-purpose flour
  • 3 tablespoons salt
  • ½ cup sugar
  • 2 tablespoons cream of tartar
  • 2 ½ cup dry milk solids
  • ¾ cup double acting baking powder
  • 2 pounds vegetable shortening

To make:

  1. Stir the baking powder, salt, dry milk, cream of tartar, and sugar into the flour.
  2. Sift all ingredients together.
  3. Cut the shortening into the mixture until it looks like cornmeal.
  4. Place in canisters/containers and store at room temperature until needed.

From here, it is easy to make your cookies.  For drop cookies, for instance, simply add:

  • 3 cups of the mix
  • 1 cup sugar
  • 1 egg
  • 1/3 cup water
  • 1 teaspoon vanilla
  • ½ cup chocolate chips, nuts, or other add-ins

Bacon Cookies

Food.com has an unusual cookie recipe, starring pancake mix. They make unique cookies for guys. Here goes:

Ingredients:

  • ½ cup butter, softened
  • ½ cup peanut butter
  • ½ cup Splenda or unpacked brown sugar
  • 1 egg
  • ½ teaspoon maple or vanilla extract
  • 10 slices bacon, cooked and crumbled
  • 1 ½ cups pancake mix

To make:

  • Preheat your oven to 325˚ and lightly grease cookie sheet.
  • Cream together butter and peanut butter.
  • Mix sugar, egg, and extract.
  • Add your pancake mix and combine.
  • Fold in the bacon crumbles.
  • Spoon tablespoons of the dough onto your cookie sheet and flatten with a fork, using a crisscross pattern.
  • Bake for 17 – 20 minutes, or until edges are light brown.

This is a sweet, savory treat that will provide an unexpected burst of flavors.  And, since they have bacon, you can eat them for breakfast!

Here’s a Yummly recipe for deep fried cookies. If you haven’t had these at the fair, you must try them!

Ingredients:

  • 1 quart canola oil for frying
  • 20 ounces chocolate sandwich with cream filling
  • 1 cup water
  • 2 cups pancake mix
  • ½ cup confectioners’ sugar

To make:

  1. Heat oil in a deep fryer to 375˚. If you are very careful, you can use a deep skillet.
  2. Combine pancake mix with water.
  3. Dip 4 – 5 cookies in this batter and fry in the hot oil. Turn once. When golden brown, remove from the oil with tongs.
  4. Put on paper towels to drain.
  5. Sprinkle with confectioners’ sugar.
    1. Combine pancake mix, milk, egg, and oil.
    2. Stir in 1 cup chopped cookies.
    3. Heat lightly greased skillet over medium heat.
    4. Spoon batter onto skillet.
    5. Cook until bubbly. Flip, and cook until lightly browned.
    6. Keep warm until ready to serve.
    7. Top with bananas, strawberries, rest of chopped cookies, and frozen yogurt.
    8. Drizzle with strawberry sauce.
    9. Serve hot!

    • 1 ½ cups bananas, sliced
    • 1 ½ fresh strawberries, sliced
    • Vanilla frozen yogurt

Weekend Treat

You can also just go ahead and put cookies in the pancake mix for a special weekend breakfast treat.

Ingredients:

  • 1 cup pancake mix
  • ¾ cup milk
  • 1 egg
  • 2 teaspoons vegetable oil
  • 12 Oreo cookies, finely chopped
  • 1 ½ cups bananas, sliced
  • 1 ½ fresh strawberries, sliced
  • Vanilla frozen yogurt
  • Strawberry syrup

To make:

  1. Combine pancake mix, milk, egg, and oil.
  2. Stir in 1 cup chopped cookies.
  3. Heat lightly greased skillet over medium heat.
  4. Spoon batter onto skillet.
  5. Cook until bubbly. Flip, and cook until lightly browned.
  6. Keep warm until ready to serve.
  7. Top with bananas, strawberries, rest of chopped cookies, and frozen yogurt.
  8. Drizzle with strawberry sauce.
  9. Serve hot!

When you keep a container of “Master Mix,” you can whip up delicious treats quickly and easily anytime. This is a great way to save time (easy and cheap cookies!), money, and to let kids help you cook (it is faster for shorter attention spans).  The results will speak for themselves!
