Green Noodle Pudding

Green noodle pudding sounds like something you'd serve on St. Patrick's Day, no? Well in the least, this tasty dish will sure make you feel lucky.

Ingredients

  • 4 egg yolksnoodle1
  • 4 tablespoons chopped scallions
  • 1 1/2 cups cooked, chopped spinach
  • 1/2 pound fine noodles, cooked and drained
  • 1 teaspoon salt
  • 4 egg whites, stiffly beaten

pdfBeat the egg yolks, and then stir in the scallions, spinach, noodles and salt. Fold in the egg whites. Pour into a 1 1/2 quart greased baking dish. Bake in 350 degree oven for 30 minutes. Serve hot with meat or dairy dishes. Serves 4 to 6.
