Golden Apple Boston Brown Bread
Don't know what to do with that fruit basket you received? Here's an idea for some delicious golden apple boston brown bread that is delicious!
Ingredients:

1/4 cup butter, softened

1/3 cup honey
-
1/3 cup light molasses
-
1 cup whole wheat flour
-
1 cup rye flour
-
1 cup yellow cornmeal
-
2 tsp. baking soda
-
1/2 tsp. salt
-
2 cups buttermilk
-
2 cups (2 medium) coarsely chopped Apples
In a large bowl, cream together the butter, honey and molasses. In a medium bowl, combine flours, cornmeal, baking soda, and salt. Add flour mixture to butter mixture alternately with buttermilk, mixing well after each addition. Stir in apples. Pour batter into 2 greased 8 ½ x 4 ½ x 2 ½ inch loaf pans. Bake in a preheated 350 degree oven for 1 hour or until wooden pick inserted near the center comes out clean. Let cool in loaf pans on wire racks for 10 minutes. Loosen edges; remove from pans. Cool slightly on wire rack; serve warm.![]()

Baby Ruth Cookie Bars
Ingredients:

1 cup brown sugar

1 1/2 cups white Karo syrup

1 cup peanut butter
-
7 cups corn flakes
-
1 cup Spanish peanuts
Heat sugars, Karo syrup and peanut butter in a large saucepan stirring frequently until it is well mixed and melted together. In large bowl, combine together the corn flake and peanuts. Pour the hot mixture over the corn flake mixture and stir well until the cornflakes and nuts are well coated. Using buttered fingers, press the mixture evenly and well into a greased 10x15” cookie sheet with sides. Cool slightly before frosting.
Frosting:
- 1 – 12 ounce package milk chocolate chips
- 3 Tbsp. peanut butter
- 2 Tbsp. butter
In a double boiler melt chocolate chips. Add peanut butter and butter. Mix well then spread on bars and cool. Cut into squares and serve.![]()

Fried Rice - Tori Hohan
Ingredients:
- 2 cups raw rice
- 2 cups water

- 2 tsp. salt
- 2 tbs. oil
- 1 cup coarsely chopped bamboo shoots
- 1 cup coarsely chopped mushrooms
- 2 cups cooked diced chicken
- 1 cup chicken broth
- 1 tbs. soy sauce
Wash the rice in several changes of water. Combine with the 2 cups water and the salt. Cover, bring to a boil and cook over low heat for 15 minutes. Drain, if necessary.Heat the oil in a skillet; sauté the bamboo shoots and mushrooms in 5 minutes. Stir in the rice and chicken; cook for 3 minutes, stirring steadily. Add the broth and soy sauce. Cook over low heat, stirring occasionally, until liquid is absorbed.

Coconut Custard (Sarikauja)
When it comes to delicious gourmet desserts, what's better than some homemade custard?
Ingredients:
Preheat oven to 350 degrees.
Beat the eggs, sugar, and salt, until thick and light. Beat in the coconut cream. Turn into 6 buttered custard cups. Set in a shallow pan of hot water. Cover each cup with a piece of aluminum foil. Bake 25 minutes, or until a knife inserted in the custard comes out clean. Cool and sprinkle with the coconut.![]()

Fruits in Syrup (Try Cai)
People love receiving fruit baskets, dessert gifts and who wouldn't love this delicious recipe for fruits in syrup?
Ingredients:
- 4 tbs. water
- 2 tbs. dry sherry
- 2 tsp. lemon or lime juice
- 1 orange
- 2 cups fresh pineapple, cubed, or canned pineapple chunks
- 1 1/2 cups fresh or canned lichees
Directions:
Cook the sugar and water until syrupy; cool and stir in the sherry and lemon juice. Peel and segment the orange; toss with the pineapple and lichees. Pour the syrup over the fruits; chill 1 hour, and serve.![]()
