Manila Style Crab Meat - Alimasag

Ingredients:

  • 2 tbs. oil
  • 1/2 lb. ground ham
  • 2 tbs. minced onions
  • 1 tbs. cornstarch
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 tsp. powdered ginger
  • 1/2 lb. crab meat
  • pdfHeat the oil in a deep skillet; sauté the ham and onions for 10 minutes. Mix together the cornstarch, water, and soy sauce; stir into the skillet until thickened. Gradually add the eggs, mixing steadily. Add the salt, pepper, and ginger; cook over low heat for 5 minutes. Add the crab meat; heat; taste for seasoning and serve on rice.

    Mixed Rice Casserole - Phoat Khat

    Ingredients:

    • 1/2 cup oil shirmp
    • 1 cup chopped scallions
    • 3 minced garlic cloves
    • 1 lb. pork, diced
    • 1 chicken breast, cubed
    • 1/4 lb. raw shrimp, shelled, deveined, and diced
    • 1 1/2 cups raw rice
    • 4 cups chicken broth
    • 2 tsp. salt
    • 1/2 tsp. freshly ground black pepper
    • 1 tsp. cinnamon
    • 1/2 tsp. ground anise
    • 1/2 tsp. powdered ginger
    • 2 tbs. vinegar
    • 2 eggs, neaten
    • 3 pimentos, cut julienneixed Rice Casserole - Phoat Khat

    Heat the oil in a large casserole or deep skillet; brown the scallions and garlic in it. Add the pork, chicken, and shrimp; sauté 5 minutes. Stir in the rice, broth, salt, pepper, cinnamon, anise, ginger, and vinegar. Cover and cook over low heat 30 minutes, or until rice is tender.

    pdfMake 2 omelets of the eggs. Roll up. Cut into narrow strips. Lightly mix into the rice mixture. Arrange the pimentos on top.

    Casseroles make for great complete meal gifts to loved ones who are sick or in need of a warm home-cooked meal.

    National Chicken and Pork Dish - Adobong Manok At Baboy

    Ingredients:

  • 1 pullet (5 pounds)
  • 1 1/2 lbs. pork
  • 2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 4 minced garlic cloves
  • 1/2 cup cider vinegar
  • 1 bay leaf
  • 3 tbs. oil
  • 1 cup water
  • 3 drops yellow food coloring (optional)
  • 1 cup coconut cream
  • Have the chicken chopped into 2-inch pieces, bone and all.

    pdfCut the pork in 1 1/2-inch pieces. Mix together the salt, pepper, garlic, vinegar, and bay leaf; marinate the pork in the mixture for 30 minutes. Drain, reserving the marinade.

    Heat the oil in a casserole or heavy saucepan; brown the chicken and pork in it. Add the marinade and water. Cover and cook over medium heat 30 minutes, or until tender and almost all the liquid has evaporated. Stir in the coloring and coconut milk. Cook for 5 minutes. Taste for seasoning.

    Chicken isn't one of our famous cookie bouquets or gourmet desserts but it is certainly a scrumptious dinner idea!

    Kraut Kugel

    • 5 cups finely shredded cabbagekraut
    • 2 teaspoons salt
    • 1/3 cup butter or fat
    • ½ cup boiling water
    • 1 ½ cups cubed white bread
    • 1/3 cup potato flour
    • ¼ cup sliced blanched almonds
    • 2 tablespoons sugar 4 eggs

    pdfCook the cabbage and salt in the butter over low heat for 30 minutes, stirring frequently. Cool. Pour the water over the bread and squeeze dry. Mash. Add the potato flour, raisins, almonds and sugar. Separate the eggs and add the yolks and cabbage. Mix until smooth. Beat the egg whites until stiff but not dry and fold into the mixture. Turn into a greased 2 quart casserole. Bake in a 350 degree oven for 40 minutes, or until set. Serves 6.

    Almonds are some of the most delicious gourmet nuts, so when it comes to any meal - it's a great addition for flavor and texture!
